Rice puddings are known in nearly every part of the world, but the recipes vary in different countries. In Iran it is served as a dessert, but some people may serve it as a light dinner too. Here is the recipe for the rice pudding which is most common in Iran, Tajikistan, and Afghanistan.

Ingredients
- 1 Cup rice
- 2 Cups water
- 2 Cups milk
- ½ Cups rosewater *optional
- 1 Cup sugar
- 50 Grams butter
- cinnamon for topping
Instructions
Wash the rice (rinse it a few times until the water runs clear) and drain. Place rice in a pot, add water and bring to a boil.
Heat the pot over low heat until almost all the water evaporates and the rice is tender. Then add milk to the pot and continue the heat until it comes to a boil. Stir frequently for 10 minutes.
Add sugar, butter and rose water and stir thoroughly for 5 more minutes.
Turn off heat and allow it to cool down. Serve with cinnamon topping.
